16 oz Laura’s Lean 96% Lean/4% Fat Ground Beef

½ tsp ground black pepper

1 tsp Italian herbs

½ tsp thyme

3 tbsp unsalted butter

1 oz onion soup mix (1 pouch)

1 clove garlic, minced
-
1 large Vidalia onion, sliced

2 cups beef broth

½ cup dry sherry wine
-
1¼ cups white long grain rice (use only this type)

1 cup sliced mushrooms

½ cup whole milk
-
1¼ cups sour cream
-
2 cups shredded cheese (your favorite type)

1 tbsp balsamic red wine vinegar
Instructions

Preheat oven to 350°F (175°C).

In a large skillet, melt butter over medium heat. Add sliced Vidalia onion and garlic, sauté until softened and translucent (about 5-7 minutes).

Add ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink. Drain excess fat if necessary.

Stir in onion soup mix, Italian herbs, thyme, ground black pepper, and sliced mushrooms. Cook for 3 minutes.

Pour in beef broth and dry sherry. Bring to a simmer and cook for 5 minutes to reduce slightly.

Stir in white long grain rice. Cover and simmer on low heat for 15 minutes until rice is partially cooked.

In a separate bowl, whisk together whole milk, sour cream, balsamic red wine vinegar, and 1 cup of shredded cheese.

Transfer the beef and rice mixture into a greased 9×13-inch baking dish. Pour the sour cream mixture evenly over the top. Sprinkle remaining 1 cup shredded cheese on top.

Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.

Let cool slightly before serving.
