- 1 cup white rice
- 2 cups beef broth
- 1 onion, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup grated Gruyere cheese
- Salt and pepper to taste
Instructions
- In a large skillet, heat the butter and olive oil over medium heat.
- Add the sliced onions and cook, stirring occasionally, until the onions are caramelized and golden brown, about 20 minutes.
- Add the rice to the skillet and stir to coat the rice with the caramelized onion mixture.
- Pour in the beef broth and bring it to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and simmer for 18-20 minutes, or until the rice is cooked through and the liquid has been absorbed.
- Season with salt and pepper to taste.
- Serve the rice topped with grated Gruyere cheese and enjoy!
Notes
- You can add a splash of white wine when caramelizing the onions for an extra layer of flavor.
- For a richer dish, stir in a little heavy cream or half-and-half after cooking.
- If you don’t have Gruyere cheese, Swiss cheese or Parmesan also work well as substitutes.
