Delight in the crispy, golden goodness of these Southern Cornmeal Hoecakes, perfect as a side dish or snack. These easy-to-make treats are a classic comfort food that pairs beautifully with any meal.


Ingredients

  • 2/3 cup cornmeal
  • 1/3 cup self-rising flour
  • 1/3 cup low-fat buttermilk
  • 1 large egg
  • 3 tablespoons oil for frying (coconut oil or your preferred oil)

Instructions

  • In a mixing bowl, whisk together the cornmeal, self-rising flour, and a pinch of salt (optional).
  • Add the buttermilk and egg to the dry ingredients and stir until a smooth batter forms. If the batter feels too thick, add a little more buttermilk to reach your desired consistency.
  • Heat the oil in a skillet over medium heat. Once the oil is hot (but not smoking), spoon about 2 tablespoons of batter into the skillet for each hoecake, spreading it gently into a round shape.
  • Fry the hoecakes for about 2-3 minutes on each side, or until they are golden brown and crispy.
  • Remove from the skillet and place them on a paper towel-lined plate to drain any excess oil.
  • Serve warm with butter, syrup, or your favorite savory toppings.

Notes

  • For extra flavor, add a pinch of sugar or a bit of honey to the batter.
  • These hoecakes are great with a variety of dips or as a side to fried chicken or beans.
