- 1/3 cup self-rising flour
- 1/3 cup low-fat buttermilk
- 1 large egg

Instructions
- In a mixing bowl, whisk together the cornmeal, self-rising flour, and a pinch of salt (optional).
- Add the buttermilk and egg to the dry ingredients and stir until a smooth batter forms. If the batter feels too thick, add a little more buttermilk to reach your desired consistency.
- Heat the oil in a skillet over medium heat. Once the oil is hot (but not smoking), spoon about 2 tablespoons of batter into the skillet for each hoecake, spreading it gently into a round shape.
- Fry the hoecakes for about 2-3 minutes on each side, or until they are golden brown and crispy.
- Remove from the skillet and place them on a paper towel-lined plate to drain any excess oil.
