Description

This Frito Taco Casserole is a crowd-pleasing, hearty dish packed with flavorful layers of seasoned ground beef, beans, corn, cheese, and crunchy Fritos. It’s quick to make and perfect for a weeknight dinner or a potluck gathering. Top with sour cream, salsa, or avocado for extra flavor!


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 can corn
  • 1 can black beans
  • 1 bag Fritos
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado

Instructions

  • Preheat oven to 350°F.
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning, diced tomatoes, corn, and black beans to the skillet. Stir to combine.
  • In a baking dish, layer half of the Fritos on the bottom.
  • Top with half of the meat mixture and half of the shredded cheese.
  • Repeat the layers with the remaining Fritos, meat mixture, and cheese.
  • Bake in the preheated oven for 15-20 minutes, until cheese is melted and bubbly.
  • Serve with optional toppings and enjoy!

Notes

  • For a spicier kick, add some diced jalapeños or hot sauce to the meat mixture.
  • You can swap out the ground beef for ground turkey or chicken for a lighter version.
  • Feel free to customize with other toppings like shredded lettuce or chopped onions.
