- 1 (8-ounce) pkg. Cream Cheese (softened)
- 3 3/4 cups Powdered Sugar
- 1 teaspoon Vanilla Extract
For the Garnish:
- 1 to 1 1/2 lbs. Fresh Strawberries
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Make the cookie dough: In a large mixing bowl, cream together the cold butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Mix dry into wet ingredients: Gradually add the dry ingredients to the wet mixture, mixing until fully combined.
- Form cookies: Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown but the centers are still soft.
- Cool the cookies on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
For the Cream Cheese Frosting:
- In a medium bowl, beat together the softened butter and cream cheese until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, beating until smooth and fluffy.
Assembling the Cookies:
- Once the cookies have cooled, spread a generous layer of cream cheese frosting on top of each cookie.
- Top with fresh strawberries: Slice the strawberries and arrange them on top of the frosted cookies.
