Description

These Garlic Butter Shrimp Stuffed Peppers are a flavorful and satisfying dish with tender shrimp cooked in garlic butter, mixed with breadcrumbs and Parmesan, then stuffed into bell peppers. A delicious and healthy dinner option!


Ingredients

  • 4 large bell peppers
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat oven to 375°F.
  • Cut the tops off the bell peppers and remove seeds and membranes.
  • In a skillet, melt butter over medium heat and sauté garlic until fragrant.
  • Add shrimp to the skillet and cook until pink, then remove shrimp and chop into small pieces.
  • In a bowl, combine shrimp, breadcrumbs, Parmesan cheese, salt, and pepper.
  • Stuff the bell peppers with the shrimp mixture and place in a baking dish.
  • Bake for 25-30 minutes, until peppers are tender.
  • Garnish with chopped parsley before serving.

Notes

  • You can substitute the shrimp with other seafood like scallops or crab if you prefer.
  • For a spicier kick, consider adding red pepper flakes to the shrimp mixture.
