- 4 large bell peppers
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 4 tbsp butter
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat oven to 375°F.
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, melt butter over medium heat and sauté garlic until fragrant.
- Add shrimp to the skillet and cook until pink, then remove shrimp and chop into small pieces.
- In a bowl, combine shrimp, breadcrumbs, Parmesan cheese, salt, and pepper.
- Stuff the bell peppers with the shrimp mixture and place in a baking dish.
- Bake for 25-30 minutes, until peppers are tender.
- Garnish with chopped parsley before serving.

- You can substitute the shrimp with other seafood like scallops or crab if you prefer.
