Description

Garlic Butter Steak Bites & Potatoes is a quick and indulgent dinner featuring tender, juicy steak pieces seared to perfection alongside crispy golden baby potatoes, all tossed in a rich garlic butter sauce. Ready in under 30 minutes, this comforting and flavorful dish is perfect for busy weeknights or whenever you want a cozy meal with minimal fuss.

Ingredients

Scale

Steak & Potatoes

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • 1 lb baby potatoes, washed and halved

Garlic Butter Sauce

  • 3 cloves garlic, minced
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley or thyme, chopped

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 tsp paprika or chili flakes for a smoky or spicy kick

Instructions

  1. Prepare the potatoes: Wash and halve baby potatoes for even cooking. Parboil for about 5 minutes until slightly tender, then drain and pat dry thoroughly to ensure crispiness.
  2. Cook the potatoes: Heat olive oil in a large skillet over medium-high heat. Add potatoes cut side down, season with salt and pepper, and cook undisturbed for 8-10 minutes until golden and crispy.
  3. Sear the steak bites: While potatoes cook, season steak pieces with salt and pepper. Push potatoes to the side, add more oil if needed, and sear steak bites in batches until browned on all sides but still juicy inside, about 2-3 minutes per side.
  4. Add garlic and butter: Lower the heat and add minced garlic to the pan. Stir quickly to prevent burning, then add butter and fresh herbs. Toss everything together, allowing the butter to melt into a luscious sauce that coats the steak and potatoes.
  5. Serve and enjoy: Remove from heat and give everything a final toss to combine flavors. Serve immediately while hot and buttery for the best taste and texture.

Notes

  • Use room temperature steak for even cooking and a perfect sear.
  • Do not overcrowd the pan; sear steak bites in batches to brown properly.
  • Pat potatoes dry after parboiling to ensure crispy edges.
  • Use fresh minced garlic for the best flavor.
  • Keep heat medium-high for searing, then reduce before adding butter to avoid burning.
