Description

These garlic butter zucchini skewers are a simple, flavorful side dish that brings out the natural sweetness of zucchini, perfectly complemented by rich, savory garlic butter. Grilled to perfection, they make the ideal accompaniment to any BBQ or as a healthy snack.

Ingredients

Scale
  • 4 small zucchinis
  • 2 tablespoons butter, melted
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  • Preheat grill to medium heat.
  • Cut zucchinis into 1-inch rounds.
  • In a small bowl, mix melted butter and minced garlic.
  • Thread zucchini rounds onto soaked wooden skewers.
  • Brush zucchini skewers with garlic butter mixture.
  • Season with salt and pepper.
  • Grill skewers for 10-12 minutes, turning occasionally until zucchini is tender and lightly charred.
  • Serve hot and enjoy!

Notes

  • If you prefer a stronger garlic flavor, feel free to add more minced garlic or let the butter and garlic mixture sit for a few minutes before brushing onto the zucchini.
  • For extra flavor, you can sprinkle some grated Parmesan or fresh herbs like parsley or basil before serving.
  • Ensure the wooden skewers are soaked in water for at least 30 minutes to prevent them from burning on the grill.
