This flavorful and easy-to-make garlic chicken fried rice is a perfect weeknight dinner. With tender chicken, scrambled eggs, and a mix of vegetables, all tossed together in a savory soy-sesame sauce, it’s a quick and satisfying meal.


Ingredients

Scale
  • 2 cups cooked white rice
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 3 cloves garlic, minced
  • 1/2 cup peas
  • 1/2 cup carrots, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped for garnish

Instructions

  • In a large skillet, heat some oil over medium heat.
  • Add the diced chicken breast and cook until no longer pink.
  • Push the chicken to one side of the skillet and add the beaten eggs to the other side.
  • Scramble the eggs and mix with the chicken.
  • Add the minced garlic, peas, and carrots to the skillet. Cook until vegetables are tender.
  • Stir in the cooked rice, soy sauce, and sesame oil. Mix well.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

  • You can use leftover rice for better texture in fried rice.
  • For extra flavor, try adding a teaspoon of hoisin sauce or chili sauce for a spicy kick.
  • This dish is also great with additional vegetables like bell peppers, corn, or mushrooms.
