These savory bite-sized cheeseburger bombs are packed with juicy ground beef, crispy bacon, cheddar cheese, and a hint of garlic. Wrapped in buttery biscuit dough and baked to golden perfection, they’re perfect as appetizers, snacks, or party finger food.

4 slices bacon, sliced into ¼-inch thick pieces

1 pound ground beef

½ onion, chopped

2 tablespoons ketchup (plus more for serving)

1 teaspoon Worcestershire sauce

2 dill pickles, finely chopped

16.3 ounces refrigerated biscuit dough (1 (8-count) tube, e.g., Pillsbury Grands Southern Homestyle Butter Tastin’)

1 cup freshly shredded cheddar cheese

2 tablespoons unsalted butter, melted

Instructions

Preheat oven to 375°F (190°C).

In a skillet over medium heat, cook bacon until crispy. Remove and drain on paper towels. Reserve 1 tablespoon bacon fat in the pan.

Add chopped onion to the skillet and sauté until translucent, about 3-4 minutes.

Add minced garlic and cook 1 minute more.

Add ground beef to the skillet and cook until browned and cooked through, breaking it apart with a spoon. Drain excess fat if necessary.

Stir in ketchup, Worcestershire sauce, chopped pickles, and cooked bacon pieces. Mix well and remove from heat. Let cool slightly.

Separate biscuit dough into 8 large biscuits. Flatten each biscuit into a 4-inch circle.

Place about 2 tablespoons of the beef mixture in the center of each dough circle, then sprinkle about 2 tablespoons shredded cheddar cheese on top.

Fold dough over filling and pinch edges to seal completely. Place seam-side down on a baking sheet lined with parchment paper.

Brush the tops of each bomb with melted butter and sprinkle sesame seeds if using.
