Description

This Garlic Parmesan Chicken and Potatoes recipe is a simple, flavorful one-pan dinner that combines tender chicken with roasted potatoes, all seasoned with garlic, Parmesan, and herbs. It’s a perfect weeknight meal that’s quick to prepare, easy to clean up, and packed with flavor!

Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

For the Potatoes:

  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine the Italian seasoning, smoked paprika, salt, and black pepper. Rub this seasoning mixture evenly over the chicken breasts (or thighs).
  • Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken and sear for about 2-3 minutes on each side until browned. Remove the chicken from the skillet and set aside.
  • In the same skillet, add 3 tablespoons of olive oil. Add the halved potatoes and toss them to coat with the oil. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Spread the potatoes in an even layer.
  • Sprinkle the minced garlic and grated Parmesan cheese over the potatoes.
  • Place the chicken on top of the potatoes in the skillet.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the potatoes are tender.
  • Remove from the oven and serve the chicken and potatoes immediately, garnished with extra Parmesan cheese if desired.

Notes

  • For added flavor, you can sprinkle the chicken with fresh parsley or basil after baking.
  • If you prefer crispy skin on the chicken, you can use bone-in, skin-on chicken thighs instead of boneless breasts.
  • Feel free to add other vegetables, such as carrots or broccoli, to the pan in the last 10-15 minutes of cooking.
