For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
For the Potatoes:
- 1.5 pounds baby Yukon Gold or red potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ⅓ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the Italian seasoning, smoked paprika, salt, and black pepper. Rub this seasoning mixture evenly over the chicken breasts (or thighs).
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken and sear for about 2-3 minutes on each side until browned. Remove the chicken from the skillet and set aside.
- In the same skillet, add 3 tablespoons of olive oil. Add the halved potatoes and toss them to coat with the oil. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Spread the potatoes in an even layer.
- Sprinkle the minced garlic and grated Parmesan cheese over the potatoes.
- Place the chicken on top of the potatoes in the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the potatoes are tender.
- Remove from the oven and serve the chicken and potatoes immediately, garnished with extra Parmesan cheese if desired.
Notes
- For added flavor, you can sprinkle the chicken with fresh parsley or basil after baking.
- If you prefer crispy skin on the chicken, you can use bone-in, skin-on chicken thighs instead of boneless breasts.
- Feel free to add other vegetables, such as carrots or broccoli, to the pan in the last 10-15 minutes of cooking.
