Description

Garlic Parmesan Chicken & Potatoes is a comforting and delicious one-pan dish featuring tender, juicy chicken and crispy, golden baby potatoes coated in a flavorful blend of garlic, parmesan, and fresh herbs. Perfect for an easy weeknight dinner or an impressive weekend meal, this recipe delivers cheesy, savory goodness with minimal effort and cleanup.

Ingredients

Scale

Protein

  • 4 boneless, skin-on chicken thighs (or breasts for a leaner option)

Vegetables

  • 1.5 lbs baby potatoes, halved
  • 34 garlic cloves, minced

Dairy & Fat

  • 1/2 cup grated parmesan cheese
  • 3 tablespoons olive oil

Herbs & Seasonings

  • 2 tablespoons fresh parsley, thyme, or rosemary, chopped
  • Salt and pepper, to taste
  • Juice of 1/2 lemon (optional)

Instructions

  1. Prep the Ingredients: Wash and halve the baby potatoes to ensure even cooking. Pat dry the chicken pieces, then season them generously with salt, pepper, and half of the minced garlic. Grate the parmesan cheese and chop fresh herbs, setting them aside for later.
  2. Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Place the chicken skin-side down and cook until golden and crispy, about 5 minutes. Flip and cook for another 3 minutes to lock in juicy flavor and create a beautiful crust.
  3. Roast Potatoes and Chicken Together: Add the halved potatoes around the chicken in the skillet. Drizzle with olive oil, add the remaining garlic, and sprinkle with salt and pepper. Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 20-25 minutes, until potatoes are tender and chicken reaches an internal temperature of 165°F (74°C).
  4. Add Parmesan and Herbs: Remove the skillet from the oven. Sprinkle the parmesan cheese evenly over the chicken and potatoes, then scatter fresh herbs on top. Return to the oven for an additional 5 minutes to melt the cheese and create a tantalizing crust.
  5. Finish with Lemon (Optional): For a bright finish, squeeze fresh lemon juice over the dish right before serving to balance the savory flavors beautifully.

Notes

  • Pat the chicken dry before searing for the crispiest skin.
  • Cut potatoes into uniform pieces to ensure even roasting.
  • Use fresh garlic for vibrant flavor compared to powders or pre-minced options.
  • Use an oven-safe skillet (cast iron or stainless steel) to save time and dishes.
  • Let the cooked chicken rest a few minutes before serving to keep it juicy and tender.
