- ½ teaspoon black pepper
- ½ teaspoon paprika (optional, for extra flavor)
- Fresh parsley (for garnish, optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the potatoes and cut them into even-sized pieces (if using regular potatoes, cut into 1-inch cubes).
- In a large bowl, toss the potatoes with olive oil, garlic, rosemary, salt, pepper, and paprika (if using).
- Spread the potatoes out evenly on a baking sheet, ensuring they’re not overcrowded (this helps them get crispy).
- Roast in the preheated oven for 30-40 minutes, tossing halfway through, until the potatoes are golden and crispy.
- Once done, remove from the oven and garnish with fresh parsley (if desired) before serving.
Notes
- For an extra crispy texture, you can parboil the potatoes for 5-7 minutes before roasting.
- You can also add other herbs like thyme or oregano for additional flavor.
