  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped) or 1 teaspoon dried rosemary
  • 1 teaspoon salt (divided)
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional, for extra flavor)
  • Fresh parsley (for garnish, optional)

Instructions

  • Preheat the oven to 425°F (220°C).
  • Wash the potatoes and cut them into even-sized pieces (if using regular potatoes, cut into 1-inch cubes).
  • In a large bowl, toss the potatoes with olive oil, garlic, rosemary, salt, pepper, and paprika (if using).
  • Spread the potatoes out evenly on a baking sheet, ensuring they’re not overcrowded (this helps them get crispy).
  • Roast in the preheated oven for 30-40 minutes, tossing halfway through, until the potatoes are golden and crispy.
  • Once done, remove from the oven and garnish with fresh parsley (if desired) before serving.

Notes

  • For an extra crispy texture, you can parboil the potatoes for 5-7 minutes before roasting.
  • You can also add other herbs like thyme or oregano for additional flavor.
