- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup butter, softened
- 3 eggs
- 3/4 cup light corn syrup
- 3/4 cup sugar
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped pecans
- 1 cup semisweet chocolate chips
- 1 cup sweetened flaked coconut
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix together the flour and powdered sugar.
- Cut in 1/2 cup of butter until the mixture resembles coarse crumbs.
- Press the crumb mixture into the bottom of a greased 9×13 inch baking pan.
- Bake in the preheated oven for 20 minutes.
- In a large bowl, beat the eggs until foamy, and then stir in the corn syrup, sugar, 2 tablespoons melted butter, and vanilla extract.
- Mix in the chopped pecans, chocolate chips, and coconut.
- Spread the mixture evenly over the baked crust.
- Bake for an additional 25 minutes, or until the filling is set and golden.
Notes
- Be sure to let the bars cool completely before slicing to allow the filling to set.
- For extra flavor, toast the coconut lightly before adding it to the filling.
