Description

Crispy and golden, these German potato pancakes are a deliciously comforting dish, perfect for breakfast, brunch, or as a savory side. Serve them with applesauce for a delightful contrast!

Ingredients

Scale
  • 4 medium russet potatoes, peeled
  • 1 small onion, peeled
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil (for frying)
  • Applesauce (for serving, optional)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • Grate the potatoes and onion using a box grater or food processor. Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much moisture as possible.
  • Transfer the grated mixture to a large bowl. Add the eggs, flour, baking powder, salt, and pepper. Mix until well combined.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Scoop spoonfuls of the potato mixture into the hot oil, pressing them down with the back of the spoon to form flat pancakes.
  • Fry for 3-4 minutes per side, or until golden brown and crispy.
  • Remove from the skillet and drain on paper towels.
  • Serve hot, topped with applesauce and garnished with fresh parsley if desired.

Notes

  • For extra flavor, consider adding garlic powder or chopped chives to the batter.
  • These pancakes can be kept warm in a low oven while you finish frying the rest.
