Instructions
- Grate the potatoes and onion using a box grater or food processor. Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much moisture as possible.
- Transfer the grated mixture to a large bowl. Add the eggs, flour, baking powder, salt, and pepper. Mix until well combined.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Scoop spoonfuls of the potato mixture into the hot oil, pressing them down with the back of the spoon to form flat pancakes.
- Fry for 3-4 minutes per side, or until golden brown and crispy.
- Remove from the skillet and drain on paper towels.
- Serve hot, topped with applesauce and garnished with fresh parsley if desired.
