For the Crust:

  • 2 1/2 cups crushed chocolate chip cookies
  • 1/3 cup granulated sugar
  • 3/4 cup unsalted butter, melted

For the Cheesecake:

  • 5 (8 oz) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 5 large eggs
  • 1 1/4 cups sour cream
  • 3/4 cup heavy cream
  • 1 1/2 cups crushed chocolate chip cookies (for mixing in)
  • 1 cup mini chocolate chips (for mixing in)

For the Topping:

  • 2 cups whipped cream
  • 1 cup mini chocolate chips
  • 1 cup crushed chocolate chip cookies
  • Optional: Cookie Monster-themed decorations

Instructions

For the Crust:

  1. Preheat oven to 325°F (163°C). Grease a 10-inch springform pan.
  2. In a bowl, mix crushed chocolate chip cookies, granulated sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of the prepared pan to form an even layer. Bake for 12 minutes, then let cool.

For the Cheesecake:

  1. In a large bowl, beat softened cream cheese and granulated sugar together until smooth and creamy.
  2. Add vanilla extract and mix well.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in sour cream and heavy cream until smooth.
  5. Fold in crushed chocolate chip cookies and mini chocolate chips.
  6. Pour the cheesecake batter over the cooled crust and smooth the top.

Baking:

  1. Bake for 65-75 minutes, or until the center is set and the edges are slightly puffed.
  2. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  3. Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight.

For the Topping:

  1. Spread whipped cream over the top of the cheesecake.
  2. Sprinkle with mini chocolate chips and crushed chocolate chip cookies.
  3. Optionally, add Cookie Monster-themed decorations for a fun touch.
