Description

Giblet gravy is the perfect accompaniment to your holiday meal. Made from the giblets of a turkey, turkey or chicken broth, and a rich roux, this savory gravy is packed with flavor. It’s the ideal topping for turkey, mashed potatoes, or stuffing, bringing warmth and richness to your feast.


Ingredients

  • Giblets from one turkey (heart, gizzard, liver)
  • 4 cups turkey or chicken broth
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • Salt and pepper to taste

Instructions

  • In a saucepan, bring the giblets and broth to a boil. Reduce heat, cover, and simmer for 1 hour.
  • Remove the giblets from the broth, chop them finely, and set them aside. Reserve the broth.
  • In a separate saucepan, melt butter over medium heat. Stir in the flour to make a roux.
  • Gradually whisk in the reserved broth until smooth. Bring to a boil, stirring constantly.
  • Reduce heat and simmer until thickened, about 5 minutes.
  • Stir in the chopped giblets and season with salt and pepper.
  • Serve hot over turkey, mashed potatoes, or stuffing.

Notes

  • If you don’t have turkey giblets, chicken giblets work as a substitute.
  • To make a smoother gravy, you can strain the broth before adding it to the roux.
  • For a richer flavor, try adding a splash of white wine or a few herbs like thyme or rosemary to the broth while simmering the giblets.
