Gochujang Chicken Sandwiches are a spicy and flavorful twist on the classic chicken sandwich. The gochujang sauce adds a bold kick, while the crispy chicken and fresh toppings create a perfect balance of textures and tastes. For the Chicken Marinade:

  • 1 pound boneless, skinless chicken breasts or thighs
  • 1/4 cup gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced

For the Breading:

  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying

For Assembly:

  • 4 sandwich buns
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumber
  • 1/2 cup pickled carrots (optional)
  • Sliced jalapeños (optional)

Instructions

  • Marinate Chicken:
    • In a bowl, mix together the gochujang, soy sauce, honey, rice vinegar, sesame oil, and minced garlic.
    • Add the chicken breasts or thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  • Prepare Breading:
    • In a shallow dish, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper.
    • Place the beaten egg in another dish and the panko breadcrumbs in a third dish.
  • Bread Chicken:
    • Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, shaking off excess, then dip into the beaten egg, and finally coat with panko breadcrumbs.
  • Fry Chicken:
    • Heat vegetable oil in a large skillet over medium-high heat. Add the breaded chicken and cook for 4-5 minutes per side, or until golden brown and cooked through, with an internal temperature of 165°F (74°C).
    • Transfer to a paper towel-lined plate to drain excess oil.
  • Assemble Sandwiches:
    • Toast the sandwich buns if desired.
    • Place a piece of fried chicken on each bun. Top with shredded lettuce, sliced cucumber, pickled carrots, and sliced jalapeños if using.
  • Serve:
    • Enjoy your Gochujang Chicken Sandwiches with your favorite sides or a refreshing drink.
