Description

Golden Seared Cod with Herb Butter Sauce is a light and flavorful dish featuring tender cod fillets perfectly seared to a golden crust. Paired with a rich and aromatic herb butter sauce, it makes for a delightful dinner that’s quick and easy to prepare. The fresh herbs elevate this dish, adding layers of flavor to the mild fish.


Ingredients

  • 4 (6-ounce) cod fillets
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter
  • 1 garlic clove, minced
  • Juice of 1/2 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, snipped

Instructions

  • Pat the cod fillets dry with paper towels. Season both sides with salt and freshly ground black pepper.
  • Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the cod fillets and sear them for 3-4 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.
  • In the same skillet, reduce the heat to medium. Add the butter and allow it to melt, scraping up any browned bits from the bottom of the skillet for extra flavor.
  • Add the minced garlic to the melted butter and sauté for 1-2 minutes until fragrant.
  • Stir in the lemon juice and fresh herbs (parsley, dill, and chives), and cook for another 1 minute.
  • Return the cod fillets to the skillet and spoon the herb butter sauce over the fish.
  • Serve immediately, garnished with additional herbs if desired.

Notes

  • You can substitute cod with halibut, haddock, or any other firm white fish if cod is unavailable.
  • For a lactose-free version, use ghee instead of butter.
  • If fresh herbs aren’t available, you can use dried herbs, but reduce the quantity (use about 1 teaspoon each of dried parsley, dill, and chives).
