- 4 (6-ounce) cod fillets
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 4 tablespoons unsalted butter
- 1 garlic clove, minced
- Juice of 1/2 lemon
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, snipped
Instructions
- Pat the cod fillets dry with paper towels. Season both sides with salt and freshly ground black pepper.
- Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the cod fillets and sear them for 3-4 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.
- In the same skillet, reduce the heat to medium. Add the butter and allow it to melt, scraping up any browned bits from the bottom of the skillet for extra flavor.
- Add the minced garlic to the melted butter and sauté for 1-2 minutes until fragrant.
- Stir in the lemon juice and fresh herbs (parsley, dill, and chives), and cook for another 1 minute.
- Return the cod fillets to the skillet and spoon the herb butter sauce over the fish.
- Serve immediately, garnished with additional herbs if desired.
Notes
- You can substitute cod with halibut, haddock, or any other firm white fish if cod is unavailable.
- For a lactose-free version, use ghee instead of butter.
- If fresh herbs aren’t available, you can use dried herbs, but reduce the quantity (use about 1 teaspoon each of dried parsley, dill, and chives).
