These Golden Strawberry Cheesecake Bars are a sweet and creamy dessert with a delicious graham cracker crust, a smooth cheesecake filling, and a fresh strawberry topping drizzled with strawberry jam. Perfect for a summer treat or any occasion!

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup strawberries, sliced
- 1/4 cup strawberry jam
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9×13 inch pan.
- In a separate bowl, beat together cream cheese, 1/2 cup sugar, eggs, and vanilla until smooth. Pour over crust.
- Bake in preheated oven for 25-30 minutes, or until set.
- Allow to cool, then top with sliced strawberries.
- Heat strawberry jam in a small saucepan until melted, then drizzle over the top of the strawberries.
- Chill in the refrigerator before cutting into bars and serving.
Notes
- Make sure the cheesecake bars cool completely before adding the strawberries and strawberry jam to prevent them from becoming soggy.
- These bars can be made a day ahead and kept in the refrigerator for extra convenience.
