Ingredients

  • 1 lb dried Great Northern beans
  • 8 cups water
  • 1 onion, diced
  • 3 carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • Rinse the dried beans and place them in a large pot with water. Bring to a boil, then reduce heat and simmer for 1 hour.
  • Add the diced onion, chopped carrots, minced garlic, dried thyme, salt, and pepper to the pot.
  • Continue simmering for another 30 minutes or until the beans are tender.
