Juicy, flavorful grilled chicken marinated in a lemony, garlicky blend of olive oil and oregano, wrapped in warm pita bread and topped with fresh veggies and creamy tzatziki sauce. Perfect for a Mediterranean-inspired meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • Salt and pepper to taste
  • Tzatziki sauce (store-bought or homemade)
  • 4 pita bread rounds
  • Sliced tomatoes, red onions, and cucumbers for serving

Instructions

  • In a bowl, mix together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts to the marinade and refrigerate for at least 1 hour (or overnight for deeper flavor).
  • Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side or until cooked through and juices run clear.
  • Remove chicken from the grill and slice it into thin strips.
  • Warm pita bread on the grill or in a pan for 1-2 minutes.
  • Assemble the gyros by adding slices of grilled chicken, tomatoes, red onions, cucumbers, and a generous amount of tzatziki sauce to each pita.
  • Serve immediately and enjoy!

Notes

  • You can substitute the grilled chicken with lamb or beef for a different twist on the classic gyro.
  • If you don’t have a grill, you can cook the chicken in a skillet over medium heat.
  • For extra flavor, add a sprinkle of crumbled feta cheese or olives to the gyros.
