For the Meatballs:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp dried parsley
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 egg
For the Tzatziki:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and excess water squeezed out
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, mix together ground chicken, breadcrumbs, red onion, garlic, oregano, basil, parsley, salt, pepper, feta cheese, parsley, mint, and egg until well combined.
- Form the mixture into meatballs and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes or until cooked through and golden brown.
- While the meatballs are baking, prepare the tzatziki by mixing together Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, salt, and pepper in a bowl.
- Serve the Greek chicken meatballs with the homemade tzatziki on the side.
Notes
- You can substitute ground turkey for chicken if preferred.
- For a creamier tzatziki, add a little more Greek yogurt to your liking.
- Meatballs can be stored in an airtight container in the fridge for up to 3 days.
