Description

These juicy and flavorful chicken skewers are packed with spices like paprika and cumin, balanced by the freshness of bell pepper and red onion. Perfect for a quick weeknight dinner or grilling on the weekend, these skewers are easy to prepare and absolutely delicious!


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into chunks

Instructions

  • Prepare the Marinade: In a medium bowl, combine olive oil, minced garlic, paprika, cumin, salt, and pepper. Stir until the mixture is well combined.
  • Marinate the Chicken: Cut the chicken breasts into bite-sized chunks. Add the chicken to the marinade, tossing to coat all pieces evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to soak in.
  • Assemble the Skewers: While the chicken marinates, cut the bell pepper and red onion into chunks. Once the chicken is ready, thread the chicken, bell pepper, and red onion onto skewers, alternating the chicken and vegetables.
  • Grill the Skewers: Preheat your grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is fully cooked and has a nice char. You can check for doneness by cutting into a chicken piece to ensure it’s no longer pink inside.
  • Serve and Enjoy: Once cooked, remove the skewers from the grill. Serve hot with your favorite sides like rice, couscous, or a fresh salad.

Notes

  • For a variation, you can add other vegetables such as zucchini, mushrooms, or cherry tomatoes to the skewers.
  • Serve these skewers with a drizzle of tzatziki sauce or a squeeze of fresh lemon for extra flavor.
  • If you’re using wooden skewers, make sure to soak them in water for about 30 minutes before grilling to prevent burning.
