- 1 lb chicken breast, cut into cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp dried oregano

- 1/2 cup plain Greek yogurt
- 2 tbsp fresh dill, chopped
- 1 cucumber, diced
- 4 pita bread
- Optional toppings: tomatoes, red onion, feta cheese
Instructions
- Marinate Chicken: In a bowl, combine olive oil, garlic, lemon juice, oregano, salt, and pepper. Add the chicken cubes and toss to coat. Cover and marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.
- Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken cubes onto skewers. Grill the chicken for 6-8 minutes per side, until it is cooked through and has a nice char.
- Make the Yogurt Sauce: While the chicken is grilling, prepare the yogurt sauce. In a separate bowl, mix together the Greek yogurt and chopped dill. Season with salt and pepper to taste.
- Assemble the Souvlaki: Warm the pita bread slightly on the grill or in the oven. Once ready, remove the chicken from the skewers and place it onto the pita. Top with diced cucumber, a generous spoonful of yogurt sauce, and optional toppings like diced tomatoes, red onion, and feta cheese.
- Serve and Enjoy: Fold the pita around the chicken and toppings, then serve immediately.
