Description

This Grilled Chicken Caprese is a fresh and flavorful dish featuring juicy grilled chicken breasts topped with mozzarella, tomato, and basil, drizzled with a sweet and tangy balsamic reduction. Perfect for a light yet satisfying dinner that combines savory, fresh, and sweet elements.

For the Grilled Chicken:

  • 4 chicken breasts

  • 1 teaspoon Italian seasoning

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and pepper, to taste

  • 4 slices mozzarella

  • 4 slices tomato

  • 2 tablespoons fresh basil, sliced

For the Balsamic Reduction:

  • ½ cup balsamic vinegar

  • 2 tablespoons light brown sugar


Instructions

  • Prepare the Balsamic Reduction:

    • In a small saucepan, combine the balsamic vinegar and brown sugar.

    • Bring to a simmer over medium heat, stirring occasionally.

    • Let the mixture simmer for 8-10 minutes, or until it has thickened to a syrupy consistency. Set aside to cool.

  • Prepare the Chicken:

    • Preheat your grill or grill pan to medium-high heat.

    • Season the chicken breasts on both sides with Italian seasoning, garlic powder, onion powder, salt, and pepper.

    • Grill the chicken for 6–7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

  • Assemble the Caprese Chicken:

    • When the chicken is cooked, top each breast with a slice of mozzarella and a slice of tomato.

    • Close the grill lid and allow the cheese to melt for 2-3 minutes.

    • Remove the chicken from the grill.

 

  • Serve:

    • Arrange the grilled chicken breasts on a serving platter.

    • Top with fresh basil slices and drizzle with the balsamic reduction.

    • Serve immediately, optionally with a side of roasted vegetables or a salad.

Notes

  • You can prepare the balsamic reduction ahead of time and store it in an airtight container in the fridge for up to a week.

  • For added flavor, consider grilling the tomatoes lightly before topping the chicken.

  • You can also serve this dish over a bed of greens or pasta for a more substantial meal.
