Description
This Grilled Zucchini is a quick, healthy, and flavorful side dish made with tender zucchini slices marinated in olive oil, red wine vinegar, and herbs. Lightly charred and perfectly seasoned, it’s the ideal summer side to serve with grilled meats, seafood, or as part of a veggie platter.
Ingredients

2 medium zucchini (about 8 oz each), sliced ¼ inch thick

1 tablespoon extra virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon dried parsley

½ teaspoon garlic powder

Kosher salt, to taste

Instructions

Preheat Grill:
Preheat an outdoor grill or grill pan over medium-high heat. -
Prepare Zucchini:
In a large bowl, toss the zucchini slices with olive oil, red wine vinegar, parsley, basil, garlic powder, salt, and pepper until evenly coated. -
Grill the Zucchini:
Place zucchini slices on the grill in a single layer. Cook for about 3–4 minutes per side, or until tender and grill marks appear. - Serve:
Remove from grill and serve immediately. Optional: sprinkle with additional herbs or a squeeze of lemon juice before serving.

For extra flavor, marinate the zucchini for 15–30 minutes before grilling.
