Description

  • 1 cup yellow or white onion, sliced (about ½ onion)

  • 1 tablespoon cooking oil (vegetable, peanut, or similar)

  • 1 lb 80/20 ground beef (preferably grass-fed)

  • 1½ cups low sodium beef broth

  • ¼ cup low sodium soy sauce

  • 2 tablespoons brown sugar

  • 3 cloves garlic, minced (about 1 tablespoon)

  • 2 teaspoons ginger paste

  • 1 teaspoon red pepper flakes (optional for heat)

  • 2 tablespoons cornstarch

  • 2 tablespoons cold water

  • Toasted sesame seeds, for garnish

  • Cooked white rice, for serving


Instructions

  • Cook Broccoli:
    Bring a pot of water to a boil. Blanch the broccoli for 2–3 minutes until bright green and just tender. Drain and set aside.

  • Sauté Aromatics and Onion:
    In a large skillet or wok, heat the cooking oil over medium-high heat. Add the sliced onions and cook for 2–3 minutes until softened.

  • Brown the Beef:
    Add the ground beef to the skillet and cook until fully browned, breaking it apart with a spatula as it cooks. Drain excess grease if needed.

  • Add Garlic and Ginger:
    Stir in the minced garlic, ginger paste, and red pepper flakes. Cook for another 1–2 minutes until fragrant.

  • Make the Sauce:
    In a small bowl, whisk together beef broth, soy sauce, and brown sugar. Pour the mixture into the skillet with the beef and stir to combine.

  • Thicken the Sauce:
    In another small bowl, mix cornstarch and cold water until smooth. Stir this slurry into the skillet and bring to a simmer. Cook for 2–3 minutes, or until the sauce thickens.

  • Add Broccoli:
    Stir in the cooked broccoli and let it heat through for 1–2 minutes. Taste and adjust seasoning if needed.

  • Serve:
    Spoon the beef and broccoli mixture over bowls of hot cooked white rice. Garnish with toasted sesame seeds and serve immediately.

  • You can substitute ground chicken or turkey for a leaner option.

  • Add sliced mushrooms, bell peppers, or snap peas for extra veggies.
