This Ground Turkey Sweet Potato Bake is a delicious and healthy one-pan meal that’s packed with protein and veggies. With savory ground turkey, roasted sweet potatoes, and zucchini, it’s a simple yet flavorful dish that’s perfect for weeknight dinners.

- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 2 small zucchini, sliced
- 2/3 cup shredded parmesan cheese
- 1 1/2 tsp garlic powder
- 1 tsp rosemary
- 5 tbsp olive oil
- Salt & pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes and zucchini slices with 2 tablespoons of olive oil, garlic powder, rosemary, salt, and pepper. Spread them evenly on a baking sheet.
- Roast the sweet potatoes and zucchini in the preheated oven for about 20-25 minutes, or until tender, stirring halfway through.
- While the vegetables roast, heat the remaining 3 tablespoons of olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and fully cooked, about 7-10 minutes.
- Once the vegetables are done, remove them from the oven and set aside. Add the cooked ground turkey to the vegetables, and stir to combine.
- Sprinkle the shredded parmesan cheese evenly over the mixture and return it to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy!

- Feel free to use a combination of sweet potatoes and regular potatoes if preferred.
