Description

This Ground Turkey Sweet Potato Bake is a delicious and healthy one-pan meal that’s packed with protein and veggies. With savory ground turkey, roasted sweet potatoes, and zucchini, it’s a simple yet flavorful dish that’s perfect for weeknight dinners.


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 2 small zucchini, sliced
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper, to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the diced sweet potatoes and zucchini slices with 2 tablespoons of olive oil, garlic powder, rosemary, salt, and pepper. Spread them evenly on a baking sheet.
  • Roast the sweet potatoes and zucchini in the preheated oven for about 20-25 minutes, or until tender, stirring halfway through.
  • While the vegetables roast, heat the remaining 3 tablespoons of olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and fully cooked, about 7-10 minutes.
  • Once the vegetables are done, remove them from the oven and set aside. Add the cooked ground turkey to the vegetables, and stir to combine.
  • Sprinkle the shredded parmesan cheese evenly over the mixture and return it to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

  • Feel free to use a combination of sweet potatoes and regular potatoes if preferred.
  • For a dairy-free option, you can skip the parmesan cheese or use a dairy-free cheese alternative.
