- 1 pound lean ground beef (90% lean)
- 1 cup shredded reduced-fat cheddar cheese
- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Whole wheat empanada dough (store-bought or homemade)
Instructions
- Preheat the oven to 400°F (200°C).
- In a pan over medium heat, cook the ground beef, onions, and bell peppers until the beef is browned and the vegetables are tender. Drain excess fat.
- Stir in garlic powder, smoked paprika, and shredded cheddar cheese, mixing until the cheese is melted.
- Roll out the whole wheat empanada dough and cut it into circles.
- Place 1-2 tablespoons of the beef mixture in the center of each dough circle, fold in half, and seal the edges with a fork.
- Bake on a parchment-lined baking sheet for 15-18 minutes or until golden brown.
Notes
