Description

Enjoy these wholesome beef and cheese empanadas made with lean ground beef and reduced-fat cheddar cheese, all wrapped in whole wheat dough. A delicious and nutritious snack or meal!


Ingredients

  • 1 pound lean ground beef (90% lean)
  • 1 cup shredded reduced-fat cheddar cheese
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Whole wheat empanada dough (store-bought or homemade)

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a pan over medium heat, cook the ground beef, onions, and bell peppers until the beef is browned and the vegetables are tender. Drain excess fat.
  • Stir in garlic powder, smoked paprika, and shredded cheddar cheese, mixing until the cheese is melted.
  • Roll out the whole wheat empanada dough and cut it into circles.
  • Place 1-2 tablespoons of the beef mixture in the center of each dough circle, fold in half, and seal the edges with a fork.
  • Bake on a parchment-lined baking sheet for 15-18 minutes or until golden brown.

Notes

Serve with salsa or a yogurt dip for added flavor.
