Ingredients

  • 1 can of tuna, drained
  • 1 cup cooked quinoa
  • 1 large sweet potato, peeled and diced
  • 1 teaspoon turmeric
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon sriracha
  • Salt and pepper to taste
  • Olive oil

Instructions

  • Preheat Oven: Preheat the oven to 400°F (200°C).
  • Roast the Sweet Potatoes: Toss the diced sweet potatoes with olive oil, turmeric, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes, or until tender.
