- 1 lb ground beef (or ground turkey)
- 1 medium onion, diced
- 1 packet taco seasoning mix
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (15 oz) can tomato sauce
- 1 1/2 cups beef broth or water
- 1 cup salsa (mild, medium, or hot, depending on preference)
Optional Toppings
- Shredded cheese
- Sour cream
- Chopped cilantro
- Diced avocado
- Tortilla chips
Instructions
- Brown the Meat:
- In a large pot, cook the ground beef (or turkey) over medium heat until browned, breaking it up as it cooks.
- Add the diced onion and cook until softened, about 5 minutes.
- Add Seasoning and Vegetables:
- Stir in the taco seasoning mix and cook for an additional 1-2 minutes.
- Add the black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, beef broth, and salsa. Stir well to combine.
- Simmer the Soup:
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes, allowing the flavors to meld together.
- Serve:
- Ladle the soup into bowls and top with your choice of shredded cheese, sour cream, chopped cilantro, diced avocado, and tortilla chips.
