Description

This Hearty Taco Soup is a flavorful, comforting dish perfect for chilly days or when you need a quick and satisfying meal. With a base of seasoned ground beef and a variety of beans and vegetables, it’s customizable with your favorite taco toppings.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced
  • 1 packet taco seasoning mix
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can tomato sauce
  • 1 1/2 cups beef broth or water
  • 1 cup salsa (mild, medium, or hot, depending on preference)

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Chopped cilantro
  • Diced avocado
  • Tortilla chips

Instructions

  • Brown the Meat:
    • In a large pot, cook the ground beef (or turkey) over medium heat until browned, breaking it up as it cooks.
    • Add the diced onion and cook until softened, about 5 minutes.
  • Add Seasoning and Vegetables:
    • Stir in the taco seasoning mix and cook for an additional 1-2 minutes.
    • Add the black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, beef broth, and salsa. Stir well to combine.
  • Simmer the Soup:
    • Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes, allowing the flavors to meld together.
  • Serve:
    • Ladle the soup into bowls and top with your choice of shredded cheese, sour cream, chopped cilantro, diced avocado, and tortilla chips.
