Description

This comforting and filling vegetable beef soup combines tender beef stew meat with a hearty mix of carrots, potatoes, and celery in a rich beef broth. Perfect for a cozy dinner, it’s full of flavor and made to warm you from the inside out.


Ingredients

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 6 cups beef broth
  • 2 potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  • In a large pot, brown the beef stew meat over medium heat until it is browned on all sides.
  • Add the chopped onion and minced garlic to the pot and sauté for 2-3 minutes until fragrant.
  • Stir in the sliced carrots, chopped celery, diced tomatoes, and beef broth.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer for 1 hour.
  • Add the diced potatoes, dried thyme, salt, and pepper. Continue simmering for an additional 30 minutes, or until the beef is tender and the vegetables are cooked through.
  • Serve hot and enjoy!

Notes

  • You can add other vegetables such as green beans or peas for more variety.
  • If you prefer a thicker soup, you can mash some of the potatoes before serving or use an immersion blender for a smoother texture.
  • For a richer flavor, you can substitute part of the beef broth with red wine or add a splash of Worcestershire sauce.
