- 1 pound beef stew meat, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, sliced
- 3 celery stalks, chopped
- 1 can diced tomatoes (14.5 oz)
- 6 cups beef broth
- 2 potatoes, peeled and diced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef stew meat over medium heat until it is browned on all sides.
- Add the chopped onion and minced garlic to the pot and sauté for 2-3 minutes until fragrant.
- Stir in the sliced carrots, chopped celery, diced tomatoes, and beef broth.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 1 hour.
- Add the diced potatoes, dried thyme, salt, and pepper. Continue simmering for an additional 30 minutes, or until the beef is tender and the vegetables are cooked through.

Notes
- You can add other vegetables such as green beans or peas for more variety.
- If you prefer a thicker soup, you can mash some of the potatoes before serving or use an immersion blender for a smoother texture.
- For a richer flavor, you can substitute part of the beef broth with red wine or add a splash of Worcestershire sauce.
