Description

This Heavenly Banana Walnut Cream Cake is a moist and decadent treat, combining the sweetness of ripe bananas with the crunch of walnuts, all topped with a fluffy, creamy frosting. Perfect for special occasions or as an indulgent dessert any time of the year.

Ingredients

Scale
  • 2 ripe bananas (mashed)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream or plain yogurt
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts

For the Cream Frosting:

  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  • Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, and salt. Set aside.
  • Cream Butter and Sugar: In a separate large bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  • Add Wet Ingredients: Stir in mashed bananas, sour cream, and vanilla extract. Mix until well combined.
  • Combine: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in chopped walnuts.
  • Bake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
  • Prepare the Frosting: In a chilled bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Assemble the Cake: Spread the whipped cream frosting generously over the cooled cake. Garnish with additional walnuts and banana slices if desired.
  • Chill and Serve: Refrigerate for at least 1 hour before serving to allow the flavors to meld. Enjoy this heavenly, moist, and nutty cake for any special occasion or just as a sweet treat!

Notes

  • For extra flavor, you can toast the walnuts before adding them to the batter.
  • You can also add chocolate chips to the batter for an additional twist.
  • If you don’t have sour cream, plain yogurt works as a good substitute.
