Ingredients

Scale

Main:

  • 220 g beef steak (rump, sirloin, or tenderloin), thinly sliced

  • 1/2 bell pepper, sliced

  • 1/2 onion, sliced

  • 3 cloves garlic, minced

  • 23 bird’s eye or hot chilies, finely chopped

  • 23 spring onions, cut into 1-inch pieces

  • 120 g dry wheat or egg noodles (or 220 g fresh noodles)

Beef Marinade:

  • 1 tsp sesame oil

  • 1 tbsp light soy sauce

  • 1/4 tsp baking soda

  • 1 tsp sugar

  • 2 tsp corn starch (corn flour)

Stir Fry Sauce:

  • 1 tbsp hoisin sauce

  • 2 tbsp oyster sauce

  • 2 tsp dark soy sauce

  • 2 tbsp rice vinegar

  • 1 tbsp sugar

  • 2 tbsp light soy sauce

Instructions

  • Marinate the Beef: In a bowl, combine the sliced beef with sesame oil, light soy sauce, baking soda, sugar, and corn starch. Mix well and let sit for at least 15–20 minutes.

  • Prepare the Sauce: In a small bowl, whisk together hoisin sauce, oyster sauce, dark soy sauce, rice vinegar, sugar, and light soy sauce. Set aside.

  • Cook the Noodles: Boil noodles according to package instructions. Drain, rinse with cold water, and set aside.

  • Stir Fry: Heat oil in a wok or large skillet over high heat. Add the marinated beef and stir fry for 2–3 minutes until just browned. Remove and set aside.

  • In the same pan, add more oil if needed. Stir fry garlic, onion, bell pepper, and chilies for 2–3 minutes.

  • Add spring onions and return the beef to the pan. Toss everything together.

  • Pour in the stir fry sauce and noodles. Stir well until everything is evenly coated and heated through, about 2 more minutes.

  • Serve hot.

Notes

  • Adjust chili quantity for your spice preference.

  • Fresh noodles can be used without pre-boiling.

  • Baking soda in the marinade helps tenderize the beef.

  • Add broccoli, mushrooms, or bok choy for extra veggies.
