Tender marinated beef stir-fried with vibrant vegetables and tossed in a rich, savory hoisin sauce with noodles. This quick and satisfying noodle dish is bursting with umami flavor, spice, and satisfying texture—perfect for a weeknight dinner or quick lunch.
Ingredients
Main:

220 g beef steak (rump, sirloin, or tenderloin), thinly sliced

1/2 bell pepper, sliced

1/2 onion, sliced

3 cloves garlic, minced

2–3 bird’s eye or hot chilies, finely chopped

2–3 spring onions, cut into 1-inch pieces

120 g dry wheat or egg noodles (or 220 g fresh noodles)
Beef Marinade:

1 tsp sesame oil
-
1 tbsp light soy sauce
-
1/4 tsp baking soda
-
1 tsp sugar
-
2 tsp corn starch (corn flour)
Stir Fry Sauce:

1 tbsp hoisin sauce
-
2 tbsp oyster sauce
-
2 tsp dark soy sauce
-
2 tbsp rice vinegar
-
1 tbsp sugar
-
2 tbsp light soy sauce
Instructions

Marinate the Beef: In a bowl, combine the sliced beef with sesame oil, light soy sauce, baking soda, sugar, and corn starch. Mix well and let sit for at least 15–20 minutes.

Prepare the Sauce: In a small bowl, whisk together hoisin sauce, oyster sauce, dark soy sauce, rice vinegar, sugar, and light soy sauce. Set aside.

Cook the Noodles: Boil noodles according to package instructions. Drain, rinse with cold water, and set aside.

Stir Fry: Heat oil in a wok or large skillet over high heat. Add the marinated beef and stir fry for 2–3 minutes until just browned. Remove and set aside.

In the same pan, add more oil if needed. Stir fry garlic, onion, bell pepper, and chilies for 2–3 minutes.

Add spring onions and return the beef to the pan. Toss everything together.

Pour in the stir fry sauce and noodles. Stir well until everything is evenly coated and heated through, about 2 more minutes.
