- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, separated
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 cups finely chopped nuts (such as pecans or walnuts)
- Caramel ice cream topping
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, cream together butter and sugar until light and fluffy.
- Beat in egg yolks and vanilla.
- Gradually add flour and salt, mixing well.
- Shape dough into 1-inch balls.
- In a small bowl, lightly beat egg whites.
- Dip each ball into egg whites, then roll in chopped nuts.
- Place on ungreased cookie sheets.
- Press a deep indentation in the center of each cookie with your thumb.
- Bake for 10-12 minutes or until set but not brown.
- Remove from oven and immediately press down the center of each cookie again.
- Fill each indentation with caramel topping.
- Let cool before serving.
Notes
For a different flavor, you can use a variety of nuts, such as almonds or hazelnuts, and try different types of caramel topping like dulce de leche. These cookies can be stored in an airtight container for up to a week.
