3–3.5 lbs cherries, pitted

1 1/4 cups granulated sugar

1/2 cup amaretto

1/2 cup water (preferably filtered)

1 lemon, juiced (zest saved for another purpose)

1 teaspoon vanilla extract

1 teaspoon almond extract
Instructions

Prepare the Cherries:

In a large bowl, pit and chop the cherries into smaller pieces to help release their juices during cooking.

Cook the Jam Base:

In a large saucepan, combine the chopped cherries, granulated sugar, amaretto, and water. Bring the mixture to a simmer over medium heat, stirring occasionally to dissolve the sugar.

Add the Flavorings:

Once the mixture has simmered for a few minutes, stir in the lemon juice, vanilla extract, and almond extract. Continue to cook the jam, stirring frequently, for about 20–30 minutes, or until the mixture thickens to your desired consistency.

To check if the jam is ready, place a spoonful on a cold plate and allow it to cool for a few seconds. Run your finger through the jam; if it wrinkles and holds its shape, it’s ready. If not, continue simmering for another 5–10 minutes and test again.

Jar the Jam:

Once the jam has thickened, remove it from the heat and ladle it into sterilized jars, leaving about 1/4 inch of space at the top. Seal the jars with lids and let them cool at room temperature.

Once cooled, store the jam in the refrigerator for up to 3 weeks. If you want to preserve it for longer, consider canning the jars using a water bath method.
