Ingredients
Scale
- For the Doughnuts:
- 3 tbsp milk
- 3 tbsp boiling water
- 1 tsp dry active yeast
- 8 oz all-purpose flour (a little under 2 cups, but it’s best to weigh it)
- 1 1/2 oz sugar (about 3 tablespoons)
- 1 egg
- 1 oz butter, cold to room temperature (avoid melting)
- Dash of salt
- Enough oil to cover the bottom few inches of a wok or a deep fryer
- For the Glaze:
- 1/3 cup butter
- 2 cups confectioners’ sugar
- 1 1/2 teaspoons vanilla extract
- 4 tablespoons hot water (or as needed)
Instructions
- In a small bowl, combine the milk, boiling water, and dry active yeast. Stir and let it sit for about 5 minutes until the mixture becomes frothy.
- In a large bowl, combine the flour, sugar, salt, and egg. Add the yeast mixture and mix until it forms a dough.
- Add the cold butter and knead the dough until it becomes smooth and elastic (about 5-7 minutes).
- Cover the dough with a damp cloth and let it rise for about 1-2 hours, or until doubled in size.
- Roll out the dough on a lightly floured surface to about 1/2 inch thickness. Use a doughnut cutter to cut out the doughnuts and their holes.
- Heat the oil in a wok or deep fryer to 350°F (175°C).
- Fry the doughnuts in the hot oil, turning them once, for about 1-2 minutes per side, until golden brown.
- Remove the doughnuts from the oil and place them on paper towels to drain excess oil.
- For the glaze: melt the butter in a bowl. Stir in the confectioners’ sugar and vanilla extract, and gradually add hot water until the glaze reaches your desired consistency.
- Dip the warm doughnuts into the glaze, ensuring they are well-coated. Place on a cooling rack to let the glaze set.
Notes
- Ensure the oil temperature stays consistent at 350°F to achieve the perfect crispness.
- You can also use a doughnut pan if you prefer to bake the doughnuts instead of frying them.
