Description

This delicious twist on the classic Reuben sandwich combines tender corned beef, tangy sauerkraut, and melted Swiss cheese, all baked together for a comforting and satisfying dish.


Ingredients

  • 1 pound deli corned beef, chopped
  • 1 can (14 ounces) sauerkraut, rinsed and drained
  • 2 cups shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 1/4 cup chopped dill pickles
  • 8 slices rye bread, cubed

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine corned beef, sauerkraut, 1 cup Swiss cheese, Thousand Island dressing, dill pickles, and cubed rye bread.
  • Transfer the mixture to a greased 9×13-inch baking dish.
  • Sprinkle with the remaining Swiss cheese.
  • Bake, uncovered, for 25-30 minutes or until heated through and the cheese is melted.

Notes

  • Serve with extra Thousand Island dressing on the side for dipping.
  • This dish can be made ahead of time and baked just before serving.
