This delicious twist on the classic Reuben sandwich combines tender corned beef, tangy sauerkraut, and melted Swiss cheese, all baked together for a comforting and satisfying dish.

- 1 pound deli corned beef, chopped
- 1 can (14 ounces) sauerkraut, rinsed and drained
- 2 cups shredded Swiss cheese
- 1/2 cup Thousand Island dressing
- 1/4 cup chopped dill pickles
- 8 slices rye bread, cubed
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine corned beef, sauerkraut, 1 cup Swiss cheese, Thousand Island dressing, dill pickles, and cubed rye bread.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle with the remaining Swiss cheese.
- Bake, uncovered, for 25-30 minutes or until heated through and the cheese is melted.
Notes
- Serve with extra Thousand Island dressing on the side for dipping.
- This dish can be made ahead of time and baked just before serving.
