Description

This Homemade Reuben Bake is a comforting and hearty dish that combines all the classic flavors of a Reuben sandwich in a delicious bake. Layered with rye bread, tender corned beef, tangy sauerkraut, and melted Swiss cheese, it’s brushed with butter and baked until crispy and gooey. Perfect for a cozy meal or feeding a crowd!


Ingredients

  • 1 loaf rye bread, sliced
  • 1/2 pound corned beef, sliced
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1/2 cup thousand island dressing
  • 2 tablespoons butter, melted
  • 1 teaspoon caraway seeds (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Spread a thin layer of thousand island dressing over one side of each slice of rye bread.
  • In the prepared baking dish, layer half of the bread slices, dressing side up. Top with half of the corned beef, sauerkraut, and Swiss cheese. Repeat the layers with the remaining ingredients.
  • Top the final layer of bread with a generous sprinkle of caraway seeds, if using.
  • Brush the top of the bread with melted butter.
  • Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the bread is crispy.
  • Let cool slightly before slicing and serving.

Notes

For extra flavor, consider adding a layer of sautéed onions or pickles. This bake is ideal for serving a crowd or enjoying as a comforting meal on a chilly day.
