  • 1 lb baby potatoes
  • 6 slices bacon, chopped
  • 2 tbsp honey
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash and dry the baby potatoes, then cut them in half.
  • In a large bowl, mix together the chopped bacon, honey, olive oil, salt, and pepper.
  • Add the halved potatoes to the bowl and toss them until evenly coated with the honey-bacon mixture.
  • Spread the potatoes on a baking sheet in a single layer, ensuring they have enough space to roast evenly.
  • Roast in the preheated oven for 30-35 minutes, or until the potatoes are tender and golden brown. Stir halfway through to ensure even roasting.
  • Garnish with freshly chopped parsley before serving.
