A sweet, moist bread infused with honey and butter, and studded with toasted pecans. Perfect for breakfast, a snack, or as a comforting treat with a cup of tea.


Ingredients

  • 1 cup pecans
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, melted
  • 1/2 cup honey
  • 2 eggs
  • 1 cup buttermilk

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  • Spread pecans on a baking sheet and toast in preheated oven for 8 to 10 minutes. Let cool.
  • In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together melted butter, honey, eggs, and buttermilk.
  • Stir wet ingredients into dry ingredients until just combined. Fold in toasted pecans.
  • Pour batter into prepared loaf pan.
  • Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool in pan for 10 minutes, then remove from pan and cool completely on a wire rack.
