- 1 cup pecans
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter, melted
- 1/2 cup honey
- 2 eggs
- 1 cup buttermilk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Spread pecans on a baking sheet and toast in preheated oven for 8 to 10 minutes. Let cool.
- In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together melted butter, honey, eggs, and buttermilk.
- Stir wet ingredients into dry ingredients until just combined. Fold in toasted pecans.
- Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes, then remove from pan and cool completely on a wire rack.
