This sweet and moist honey cornbread is the perfect balance of savory and sweet. With the richness of honey and a tender texture, it’s the ideal side dish for any meal, especially soups, stews, and BBQ.


Ingredients

Scale
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/2 cup honey
  • 1/2 cup melted butter

Instructions

  • Preheat oven to 400°F (200°C). Grease a 9-inch square baking dish.
  • In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  • In a separate bowl, mix together milk, eggs, honey, and melted butter.
  • Stir wet ingredients into dry ingredients until just combined.
  • Pour batter into prepared baking dish.
  • Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • Serve warm with butter and extra honey if desired.

Notes

  • For extra sweetness, you can drizzle more honey over the cornbread once it’s baked.
  • To make it a bit richer, try substituting some of the milk with buttermilk.
  • Leftovers can be wrapped and stored for a few days, or frozen for longer storage.
