These honey garlic butter roasted carrots are a perfect blend of sweet, savory, and buttery goodness. Roasted to perfection, they make a flavorful and easy side dish for any meal.


Ingredients

  • 2 lbs carrots, peeled and sliced
  • 2 tbsp butter, melted
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, combine melted butter, honey, garlic, salt, and pepper.
  • Add carrots to the bowl and toss until evenly coated.
  • Spread carrots in a single layer on a baking sheet.
  • Roast in the preheated oven for 25-30 minutes, or until carrots are tender.
  • Garnish with chopped parsley before serving.

Notes

  • For extra caramelization, you can broil the carrots for the last 2-3 minutes of cooking.
  • If you prefer a spicier version, add a pinch of red pepper flakes or cayenne pepper.
