Ingredients

  • 1 pound carrots, peeled and trimmed
  • 3 tablespoons butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Arrange the carrots on the baking sheet in a single layer.
  • In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, salt, and pepper.
  • Pour the mixture over the carrots, ensuring they are evenly coated.
  • Roast in the preheated oven for 20–25 minutes, turning the carrots halfway through, until they are tender and slightly caramelized.
  • Remove from the oven and garnish with fresh parsley before serving.

Notes

  • For extra caramelization, broil the carrots for the last 2–3 minutes of roasting.
