- 1 ½ cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- For the Filling:
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup honey
- 4 large eggs
- 1 cup sour cream
- 1 cup heavy cream
- 2 tablespoons dried culinary-grade lavender flowers
- 1 teaspoon vanilla extract
- For the Topping:
- 1/4 cup honey
- Fresh lavender sprigs for garnish (optional)
Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then remove from the oven and let it cool while preparing the filling.
- Prepare the Filling:
- In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add honey and continue to beat until well incorporated.
- Mix in eggs, one at a time, beating well after each addition.
- Add sour cream, heavy cream, dried lavender flowers, and vanilla extract. Mix until smooth.
- Pour the cream cheese mixture over the cooled crust in the springform pan.
- Bake the Cheesecake:
- Bake for 55-65 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and chill in the refrigerator for at least 4 hours, or overnight for best results.
- Prepare the Topping:
- Drizzle honey over the top of the chilled cheesecake before serving.
- Garnish with fresh lavender sprigs if desired.
