Ingredients

  • For the Crust:
    • 1 ½ cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
  • For the Filling:
    • 4 (8-ounce) packages cream cheese, softened
    • 1 cup granulated sugar
    • 1/2 cup honey
    • 4 large eggs
    • 1 cup sour cream
    • 1 cup heavy cream
    • 2 tablespoons dried culinary-grade lavender flowers
    • 1 teaspoon vanilla extract
  • For the Topping:
    • 1/4 cup honey
    • Fresh lavender sprigs for garnish (optional)

Instructions

  • Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan.
    • Bake for 10 minutes, then remove from the oven and let it cool while preparing the filling.
  • Prepare the Filling:
    • In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
    • Add honey and continue to beat until well incorporated.
    • Mix in eggs, one at a time, beating well after each addition.
    • Add sour cream, heavy cream, dried lavender flowers, and vanilla extract. Mix until smooth.
    • Pour the cream cheese mixture over the cooled crust in the springform pan.
  • Bake the Cheesecake:
    • Bake for 55-65 minutes, or until the center is set but still slightly jiggly.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
    • Remove from the oven and chill in the refrigerator for at least 4 hours, or overnight for best results.
  • Prepare the Topping:
    • Drizzle honey over the top of the chilled cheesecake before serving.
    • Garnish with fresh lavender sprigs if desired.
