  • 2 ¼ pounds boneless, skinless chicken thighs (about 8 thighs)
  • Salt and pepper, to taste
  • ½ cup Dijon mustard
  • ½ cup honey
  • 2 tablespoons extra virgin olive oil
  • 3 sprigs fresh thyme
  • Chopped fresh parsley, for garnish (optional)

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Season the Chicken: Season the chicken thighs with salt and pepper on both sides.
  • Make the Honey Mustard Sauce: In a small bowl, whisk together Dijon mustard, honey, and olive oil until well combined.
  • Cook the Chicken: Heat a large oven-safe skillet over medium-high heat. Add the chicken thighs and sear them for 2-3 minutes per side, until golden brown.
  • Add Sauce and Thyme: Once the chicken is browned, pour the honey mustard sauce over the chicken. Add the fresh thyme sprigs to the skillet.
  • Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Serve: Remove from the oven, discard the thyme sprigs, and garnish with freshly chopped parsley if desired. Serve the chicken with your favorite sides and enjoy!
