Ingredients
Scale
- 2 ¼ pounds boneless, skinless chicken thighs (about 8 thighs)
- Salt and pepper, to taste
- ½ cup Dijon mustard
- ½ cup honey
- 2 tablespoons extra virgin olive oil
- 3 sprigs fresh thyme
- Chopped fresh parsley, for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Season the Chicken: Season the chicken thighs with salt and pepper on both sides.
- Make the Honey Mustard Sauce: In a small bowl, whisk together Dijon mustard, honey, and olive oil until well combined.
- Cook the Chicken: Heat a large oven-safe skillet over medium-high heat. Add the chicken thighs and sear them for 2-3 minutes per side, until golden brown.
- Add Sauce and Thyme: Once the chicken is browned, pour the honey mustard sauce over the chicken. Add the fresh thyme sprigs to the skillet.
- Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Serve: Remove from the oven, discard the thyme sprigs, and garnish with freshly chopped parsley if desired. Serve the chicken with your favorite sides and enjoy!
Notes
- This recipe works well with chicken breasts or drumsticks as a substitute for thighs. Just adjust the cooking time accordingly.
- For extra flavor, you can marinate the chicken in the honey mustard sauce for 30 minutes to 2 hours before cooking.
- Pair the chicken with roasted vegetables, rice, or a simple green salad for a complete meal.
