- 1.5 lbs beef stew meat, cubed
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 can diced tomatoes
- 2 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions
- Set Instant Pot to sauté mode and brown the beef stew meat.
- Add in the onion, carrots, and potatoes.
- Pour in the beef broth and diced tomatoes.
- Stir in garlic powder, thyme, salt, and pepper.
- Close the lid and set to high pressure for 35 minutes.
- Quick release the pressure and serve hot.
Notes
For extra depth of flavor, add a splash of Worcestershire sauce or a bay leaf. You can also thicken the stew with a cornstarch slurry if desired.
