Description

This hearty and comforting Instant Pot Beef Stew is filled with tender beef, savory vegetables, and a rich broth, perfect for a quick and satisfying meal on busy days.


Ingredients

Scale
  • 1.5 lbs beef stew meat, cubed
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  • Set Instant Pot to sauté mode and brown the beef stew meat.
  • Add in the onion, carrots, and potatoes.
  • Pour in the beef broth and diced tomatoes.
  • Stir in garlic powder, thyme, salt, and pepper.
  • Close the lid and set to high pressure for 35 minutes.
  • Quick release the pressure and serve hot.

Notes

For extra depth of flavor, add a splash of Worcestershire sauce or a bay leaf. You can also thicken the stew with a cornstarch slurry if desired.
