Description
Creamy and delicious Instant Pot Chicken Alfredo made quickly in under 30 minutes. This one-pot meal features tender chicken, perfectly cooked fettuccine, and a rich Alfredo sauce that is both indulgent and easy to prepare, perfect for a comforting weeknight dinner with minimal cleanup.
Ingredients
Protein
- 2 boneless, skinless chicken breasts
Pasta
- 8 ounces fettuccine pasta, uncooked
Dairy & Cream
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons butter
Liquids
- 2 cups chicken broth
Seasonings
- 3 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
Instructions
- Step 1: Sauté Aromatics and Chicken
Turn the Instant Pot to the sauté setting. Melt the butter, then add the minced garlic and cook until fragrant. Season the chicken breasts with salt and pepper, then brown them lightly on both sides to lock in flavor.
- Step 2: Add Pasta and Liquids
Place the uncooked fettuccine pasta in a neat layer over the browned chicken breasts. Carefully pour in the chicken broth and heavy cream, making sure the pasta is mostly submerged. Do not stir to prevent the pasta from sticking to the bottom.
- Step 3: Pressure Cook
Seal the Instant Pot lid and set it to cook at high pressure for 8 minutes. When the cooking cycle completes, use a quick release to bring down the pressure immediately.
- Step 4: Finish with Cheese and Sauce
Open the lid, remove the chicken breasts and shred or slice them. Stir the freshly grated Parmesan cheese into the pot, combining all ingredients into a creamy Alfredo sauce. Return the chicken to the pot and gently mix to coat with the sauce.
- Step 5: Serve and Enjoy
Serve the creamy chicken Alfredo plated, garnished with freshly chopped parsley or cracked black pepper for a restaurant-quality finish.
Notes
- Use bone-in chicken for more flavor but adjust cooking time accordingly.
- Avoid over-stirring to prevent pasta from sticking or becoming mushy.
- Freshly grate Parmesan cheese instead of using pre-grated for better melting.
- Layer pasta over chicken rather than mixing to avoid sticking to the pot’s bottom.
- Use quick pressure release to prevent overcooking chicken and pasta.
