Description

Instant Pot Egg Bites are a quick, protein-packed breakfast or snack option that tastes like it took hours to prepare. Creamy, fluffy, and endlessly customizable, these egg bites come together in under 30 minutes using your Instant Pot. Perfect for busy mornings or meal prep, they deliver satisfying flavor, nutrition, and easy cleanup with dishwasher-safe silicone molds.

Ingredients

Scale

Base Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese or cream cheese
  • 1/4 cup milk or heavy cream
  • 1/2 cup shredded cheese of choice (sharp cheddar, mozzarella, or Swiss)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Add-Ins

  • Diced vegetables (spinach, mushrooms, bell peppers, jalapeños)
  • Cooked bacon or sausage
  • Fresh herbs (basil, chives, parsley)

Instructions

  1. Prepare Your Silicone Molds: Lightly grease silicone egg bite molds or standard muffin cups to ensure easy release after cooking. Arrange your chosen add-ins evenly in each mold for consistent bites.
  2. Mix the Egg Base: In a blender or bowl, combine eggs, cottage cheese or cream cheese, milk or cream, shredded cheese, salt, and pepper. Blend or whisk until smooth and creamy, ensuring a silky texture for perfect bite consistency.
  3. Pour and Fill: Pour the egg mixture over your add-ins in the molds, filling them about three-quarters full to allow for expansion during cooking. Tap molds gently to release any air bubbles and ensure even cooking.
  4. Set Up Instant Pot: Add one cup of water to the Instant Pot insert and place the trivet inside. Carefully place the filled molds on the trivet. Seal the lid and set the valve to sealing mode.
  5. Cook on High Pressure: Set the Instant Pot to high pressure for 8 minutes. Once cooking is complete, allow natural pressure release for 10 minutes, then carefully quick-release any remaining pressure.
  6. Cool and Remove: Remove molds carefully and let the egg bites cool slightly before gently popping them out. Serve warm for maximum creamy goodness.

Notes

  • Use a blender for the creamiest texture by blending the mixture until fully smooth.
  • Don’t overfill molds; leave space to avoid overflow during cooking.
  • Natural pressure release improves texture by preventing the egg bites from deflating.
  • Pre-cook add-ins like bacon, sausage, or veggies before adding to molds to avoid sogginess.
  • Experiment with different cheeses to find your favorite flavor combination.
